Sweet Strawberry Pancakes with Cream Cheese

This recipe is a work in progress but I want to get it down. It’s pretty delicious so far!

Ingredients

  • 1/2 cup of whole wheat flour
  • 1/2 cup of rolled oats
  • 1 tsp of baking soda
  • A pinch of salt
  • 1/2 cup of milk
  • 1/2 cup of strawberry or vanilla yogourt (or one individual cup)
  • 1 egg
  • 1 tbsp melted butter
  • 1 tbsp honey
  • 5-10 strawberries, sliced
  • Cream cheese (for spreading)

Procedure

  1. In a large bowl, combine dry ingredients, mixing thoroughly
  2. Add the strawberry yogourt, egg, melted butter, and honey
  3. Slowly add in the milk, mixing well to combine
  4. Add the strawberries
  5. Heat up a skillet on medium heat (as it heats, you might want to turn it just below medium)— when you flick water on the skillet and it dances but doesn’t explode, it’s probably a good temperature
  6. Add a little butter to the skillet
  7. Scoop the batter onto the skillet into circle-ish globs
  8. Let the pancakes cook for a couple minutes until the surface of the pancakes starts to bubble- then flip and allow to cook for a couple more minutes
  9. Spread with cream cheese and serve warm

Tada! A delicious breakfast. Make extra pancakes and store them in the fridge for a couple days OR the freezer for a couple weeks! Pop them in the microwave, oven, or toaster for a ready-made breakfast option.
