Summer “Pan-Asian” Pasta Salad

Another simple but pretty fancy-looking summer recipe.


  • Small package of snow peas
  • Half bag of julienned carrots (or julienne about 2-3 large carrots yourself)
  • 1/4 package of linguine noodles (could be whole wheat…you could also use egg noodles)
  • Pre-made sauce (we used PC Blue Menu Light Memories of Schezchuan Spicy Peanut Satay Sauce)
  • Crushed peanuts
  • Optional: 1 julienned red bell pepper
  1. Cook the linguine according to package directions
  2. Wash the snow peas
  3. Once the linguine is cooked, drain it and add the carrots and snow peas (add pepper if desired)
  4. Toss with the sauce and some peanuts
  5. Allow to sit in the fridge until cold (could be for several hours to allow flavours to mix)
  6. Garnish with sprinkled peanuts
