Spicy “Sausage” Linguine

Prep time: Negligible
Cook time: 20 minutes*
Seasonal: You can make this year round using locally-sourced ingredients
Serves: 2


  • 2 large cans diced tomatoes (with herbs is good)
  • 1 tsp fresh garlic
  • 2 tsp olive oil
  • Black pepper
  • Crushed red pepper flakes
  • 1/2 tsp brown sugar
  • Tofu sausages (I used “Sweet Italian” flavour)
  • 1 pkg fresh whole wheat linguine (e.g. Life Smart –> boxed is OK too)
1. Put a medium pot on the stove on medium heat
2. Brown garlic (well, not too brown), by adding it to 1 tsp olive oil
3. Pour in both cans of tomatoes
4. Season with black pepper and one dash of crushed red pepper flakes
5. Let it come to a bit of a boil, then bring it down to lower heat and allow to simmer for as long as you desire (*longer is better)
6. Add the brown sugar to taste to cut the acidity
7. When ready, cook pasta according to package directions (should take 3-8 minutes)
8. Cut the sausages into slices and brown them in a pan according to package directions
9. Add sausages to sauce
10. Pour sauce over pasta and enjoy!
Hint: If you want to make things extra easy on yourself, take some pre-made pasta sauce and just add the crushed red pepper flakes and sausage.
